Irish Pride Tea Sandwiches

Ingredients
 
 

  • 8 Ounces Cream Cheese
  • 1 Tablespoon Lemon Juice
  • 1/2 Teaspoon Worcestershire Sauce
  • 1/8 Teaspoon Garlic Powder
  • 1 Tablespoon Scallions - mostly white parts - minced ( or 1/4 Teaspoon Onion Powder)
  • 1/2 Teaspoon Dill Weed
  • 1 Mini Cucumber (or 1/2 english cucumber)
  • 1/2 Medium Carrot
  • 24 Slices Mini Party Rye Bread

Instructions
 

  • Mix cream cheese, lemon juice, Worcestershire sauce, garlic powder, scallions, and dill weed together in a stand mixer.
  • Spread a thin layer on each slice of mini party rye bread.
  • Slice cucumbers and carrots about 1/16” thin with a mandoline and arrange on top of cheese. Serve immediately.
  • It’s not recommended that they be made a day ahead as the bread can get soggy. However, you can mix the cheese blend and slice the veggies a day ahead.

Notes

If you do not have a mandoline, you could always use a vegetable peeler and have strips of cucumbers and carrots instead of the layered discs.
