Concoction No. 2

This is a quick and easy one pot meal with Smoked Sausage, Potatoes, Onions, Green Beans and Bell Peppers.

  • 3 Smoked Sausages
  • 4 Medium Potatoes
  • 1 Medium Onion
  • 2 Bell Pepper Any color you wish
  • 1 14.5 Ounce Can Green Beans
  • 3 Tablespoons olive oil
  • 4 Tablespoons tomato paste
  • 1 Cup Chicken Stock
  • 1 Cup water


  • Heat large skillet or Dutch oven on medium high. Add olive oil, onions and potatoes. Cook for a few minutes being careful not to burn them. Add chicken stock, water and tomato paste, cover with lid and cook for another few minutes until potatoes are starting to be fork tender about halfway through. Stir in the bell peppers and sausage, then top with the green beans and cook for another few minutes or until potatoes are fully cooked and everything is heated through. Salt and pepper to taste. If potatoes are not done yet, and food is getting dry and sticking to the pan, add more water – about 1/2 cup at a time.
